Preheat oven to 180 C.
Add the chopped vegetables to 2 baking trays and distribute evenly.
Mix the spices, seasoning and oil together in a separate bowl. Sprinkle this over the top of the vegetables evenly.
Place in the oven and check after 15 minutes and turn over. Cook for another 15 minutes and check again adding the chopped garlic.
Once golden and cooked through serve with fresh spinach leaves and toasted pine nuts.
