Heat the oil and ghee in a pan over medium heat.
Add the lime slices and cook for 1 minute on each side.
Add the sage leaves and cook for a further minute, remove the lime and sage from the pan and set aside.
Add the fish to the pan and cook for 3 minutes on each side or until tender.
Sprinkle with salt and pepper and serve with the lime slices and sage leaves on top. Serve with freshly roasted potatoes and fresh salad.
