¼ cup cup spring onion, finely chopped
½ cup fresh coriander, finely chopped
4 cloves of garlic, crushed
¼ cup arrowroot flour
3 organic free range eggs, beaten
1 tbsp fish sauce
1 tsp freshly ground black pepper
2 large corn cobs, with corn kernels sliced off
2 tbsp CH Coconut Oil or ghee

Combine all ingredients except oil in a glass bowl and mix well.

Heat oil or ghee in a frying pan over medium heat. When hot, drop in large tablespoons of batter.

Cook on both sides until golden and crisp.

Serve with homemade sweet chilli sauce and salad.
